Grilled Pork Tenderloin with Corn-Pepper Relish

INGREDIENTS :

1 can (15 oz.) black beans, rinsed
1 can (10 oz.) corn, drained
1 red pepper, chopped
3/4 cup prepared GOOD SEASONS Italian Dressing Mix for Fat Free Dressing, divided
2 pork tenderloins (1-1/2 lb.)

COOKING DIRECTIONS :

HEAT grill to medium heat.

COMBINE beans, corn, peppers and 1/2 cup dressing.

GRILL meat 12 to 15 min. or until done (160ºF), turning occasionally and brushing with remaining dressing.

CUT meat into 1/2-inch-thick slices. Serve with the bean mixture.

Prepare using pinto beans.
Special Extra
For extra color and flavor, add 2 finely chopped green onions to the corn relish.
Variation
Pour 1/2 cup dressing over meat in shallow dish; turn meat over to evenly coat meat with dressing. Refrigerate 30 min. to marinate, turning occasionally. Remove meat from marinade; discard marinade. Place meat in shallow pan. Bake at 400ºF for 25 to 30 min. or until done (160ºF).
