STOVE TOP Easy Chicken Bake

INGREDIENTS :

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 can (10-3/4 oz.) condensed cream of chicken soup
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (16 oz.) frozen mixed vegetables, thawed, drained

COOKING DIRECTIONS :

HEAT oven to 400ºF.

PREPARE stuffing as directed on package.

MIX remaining ingredients in 13x9-inch baking dish; top with stuffing.

BAKE 30 min. or until chicken is done. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 min. or until heated through.

Easy Parmesan-Garlic Chicken

INGREDIENTS :

1/2 cup KRAFT Grated Parmesan Cheese
1 env. GOOD SEASONS Italian Dressing Mix
1/2 tsp. garlic powder
6 boneless skinless chicken breast halves (2 lb.)

COOKING DIRECTIONS :

HEAT oven to 400°F.

MIX cheese, dressing mix and garlic powder.

MOISTEN chicken with water; coat with cheese mixture. Place in shallow baking dish.

BAKE 20 to 25 min. or until chicken is done (165°F).

Special Extra
For a golden appearance, after chicken is cooked through set oven to Broil. Place 6 inches from heat. Broil 2 to 4 min. or until chicken is golden brown.
Variations
Prepare as directed, choosing one of the following flavor combinations: Mediterranean Parmesan Chicken: Substitute 1 Tbsp. lemon zest and 1 tsp. dried oregano leaves for the garlic powder. Parmesan-Onion Chicken: Substitute 2 Tbsp. minced onion flakes for the garlic powder. Spicy Parmesan Chicken: Substitute ground red pepper (cayenne) for the garlic powder. Parmesan Pizza Chicken: Substitute 1 tsp. dried basil leaves and 1/4 tsp. crushed red pepper for the garlic powder.

Easy Peanut Butter Cookies

INGREDIENTS :

1 egg
1 cup creamy peanut butter
1 cup sugar
1/2 cup chopped PLANTERS COCKTAIL Peanuts
1 tsp. vanilla

COOKING DIRECTIONS :

PREHEAT oven to 350°F. Beat egg in large bowl with electric mixer on medium speed until foamy. Add remaining ingredients; beat until well blended.

SHAPE into 1-inch balls. Place, 2 inches apart, on ungreased baking sheets. Flatten each ball, in criss-cross pattern, with tines of fork.

BAKE 10 min. or until lightly browned. Cool 1 min. Remove from baking sheets to wire racks; cool completely.

Storage Know-How
Plastic storage containers and resealable plastic bags keep cookies fresh. Old-fashioned cookie tins do the job well, if they have a tight seal. Never store cookies in any kind of container until they have cooled completely.

Easy Banana Pudding Parfaits

INGREDIENTS :

12 NILLA Wafers, divided
1/4 cup thawed COOL WHIP Whipped Topping, divided
1 small banana, cut into 10 slices, divided
2 JELL-O Vanilla Pudding Snacks

COOKING DIRECTIONS :

CRUSH 10 wafers to form coarse crumbs. Divide half the wafer crumbs between 2 parfait glasses or dessert dishes; top each with 1 Tbsp. COOL WHIP, 2 banana slices and half of 1 pudding snack. Repeat layers of crumbs, bananas and pudding.

REFRIGERATE 15 min. Meanwhile, wrap reserved banana slices tightly in plastic wrap; refrigerate until ready to use.

TOP parfaits with remaining COOL WHIP, wafers and banana slices just before serving.

Easy Vegetable Toss

INGREDIENTS :

1 lb. broccoli florets
1 lb. cauliflower florets
1/2 lb. green beans, ends trimmed
1 large red pepper, cut into 1/2-inch-wide strips
1/2 cup KRAFT Zesty Italian Dressing
1/3 cup KRAFT Shredded Parmesan Cheese

COOKING DIRECTIONS :

ADD broccoli, cauliflower and beans to boiling water in large saucepan. Cook 3 to 5 min. or just until vegetables are crisp-tender. (Do not overcook.) Drain. Immediately rinse with very cold water; drain again.

PLACE vegetable mixture in large serving bowl. Add peppers; mix lightly. Cover. Refrigerate several hours or until chilled.

ADD dressing and cheese just before serving; toss to coat.

Serve it Hot
For a change of pace, serve hot. Cook vegetables as directed; drain. Add remaining ingredients; mix lightly. Serve immediately.
Variation
Prepare as directed, using KRAFT Sun-Dried Tomato Dressing and KRAFT Grated Parmesan Cheese.

INGREDIENTS :

2 lb. lean ground beef

1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

COOKING DIRECTIONS :

HEAT oven to 375°F.

PLACE meat, stuffing mix, water, eggs and 1/4 cup barbecue sauce in bowl.

MIX just until blended.

SHAPE into loaf in 13x9-inch baking dish.

TOP with remaining barbecue sauce. Bake 1 hour or until done (160ºF).

To Double
Mix meat mixture as directed, doubling all ingredients. Shape into 2 loaves. Place, side-by-side, in 13x9-inch baking dish. Bake at 375°F for 1 hour 25 min. or until done. Refrigerate leftover meatloaf; use to make sandwiches.
How to Make Cleanup Easy
Place all ingredients except 1/4 cup barbecue sauce in gallon-size resealable plastic bag. Remove excess air from bag; seal bag and squeeze until ingredients are evenly mixed. Shape meat mixture into loaf in bag. Transfer loaf from bag to baking dish; brush with remaining barbecue sauce. Bake as directed.
Variation
Substitute ground pork or veal for the ground beef and/or ketchup for the barbecue sauce.

Easy Cheesy Frittata

INGREDIENTS :

4 whole eggs
4 egg whites
2 Tbsp. water
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
1/2 cup chopped seeded tomatoes
2 slices OSCAR MAYER Bacon or OSCAR MAYER Turkey Bacon, crisply cooked, crumbled
1/4 cup chopped fresh basil

COOKING DIRECTIONS :

HEAT oven to 350°F. Beat whole eggs, egg whites and water with whisk in medium bowl until blended.

STIR in 1/2 cup cheese, tomatoes, bacon and basil. Pour into greased 9-inch pie plate.

BAKE 25 min. or until puffed and golden brown. Sprinkle with remaining cheese; bake 5 min. or until melted.

How to Make Mini-Frittatas

Easy Chinese Stir-Fry

INGREDIENTS :

1 tsp. oil
1 lb. pork tenderloin, cut into thin slices
3 carrots, sliced
1/3 cup KRAFT Balsamic Vinaigrette Dressing
2 Tbsp. hoisin sauce
2 green onions, thinly sliced

COOKING DIRECTIONS :

HEAT oil in large skillet on medium-high heat. Add meat and carrots; cook and stir 5 min.

STIR in dressing and hoisin sauce; stir-fry 7 min. or until carrots are crisp-tender, stirring frequently.

ADD onions; cook 1 min.

For extra browning of the cooked pork, sprinkle meat strips with 1 tsp. cornstarch before stir-frying.

1 clove garlic, minced

COOKING DIRECTIONS :

PREHEAT oven to 375°F. Mix meat, cheese, parsley, egg and garlic. Shape into 12 meatballs.

PLACE in foil-lined 15x10x1-inch baking pan.

BAKE 25 min. or until cooked through.

Easy Bistro Chicken

INGREDIENTS :

2 tsp. oil
3 cups sliced fresh mushrooms
1 medium onion, chopped
1 can (15 oz.) stewed tomatoes, undrained
1/4 cup KRAFT Zesty Italian Dressing
3 Tbsp. tomato paste
4 small boneless skinless chicken breast halves (1 lb.)
1 cup KRAFT Low-Moisture Part-Skim Mozzarella Cheese
2 slices OSCAR MAYER Fully Cooked Bacon, crumbled

COOKING DIRECTIONS :

HEAT oil in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 5 min., stirring occasionally. Stir in tomatoes, dressing and tomato paste.

ADD chicken; cover. Reduce heat to medium-low. Simmer 12 min. or until chicken is cooked through.

SPRINKLE with cheese and bacon; simmer, uncovered, 5 min. or until cheese is melted.

This dish also tastes great when served as leftovers. Just reheat in the microwave before enjoying as part of your lunch or dinner the next day.

Substitute
Substitute 1/4 cup OSCAR MAYER Real Bacon Bits for the cooked and crumbled bacon.

Place bacon slices in single layer on paper towels on microwaveable plate. Cover with paper towel. Microwave on HIGH 1-1/2 to 2 min. or until desired crispness.
