Bacon-Cheddar Breakfast Muffins

INGREDIENTS :

cup all-purpose flour
1/3
cup quick-cooking oats

Tbsp. baking powder
1/2
tsp. salt
1/4
tsp. ground cinnamon

tsp. pepper

EGGS

cup applesauce
1/2
cup shredded Cheddar cheese (2 oz.)
1/4
cup finely-chopped crisp-cooked bacon
1/4
cup chopped fresh parsley

COOKING DIRECTIONS :

  • HEAT oven to 375°F. MIX flour, oats, baking powder, salt, cinnamon and pepper in large bowl.
  • BEAT eggs and applesauce in medium bowl until blended. ADD to flour mixture; stir just until moistened. STIR IN cheese, bacon and parsley. SPOON evenly into 12 greased 3-inch muffin cups.
  • BAKE in 375°F oven until tops are lightly browned and spring back when tapped with finger, 15 to 20 minutes. COOL in pan on wire rack 5 minutes; remove from pan. SERVE warm or cool completely.

    Tex-Mex Breakfast Scramble

    INGREDIENTS :

    2 cups cholesterol-free egg product
    1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
    1 cup chopped green peppers
    1/2 cup chopped onions
    1/2 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese
    1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

    COOKING DIRECTIONS :

    BEAT egg product and cottage cheese in small bowl with wire whisk until well blended; set aside.

    SPRAY medium nonstick skillet with cooking spray. Add peppers and onions; cook on medium-high heat 2 to 4 min. or until vegetables are crisp-tender, stirring occasionally.

    ADD egg product mixture and Cheddar cheese. Reduce heat to medium; cook 8 to 10 min. or until egg product mixture is set, stirring frequently. Serve topped with the salsa.
