Parmesan Baked Salmon


INGREDIENTS :

1/4 cup KRAFT Real Mayo Mayonnaise
2 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)
4 salmon fillets (1 lb.), skin removed
2 tsp. lemon juice
10 RITZ Crackers, crushed (about 1/2 cup)

COOKING DIRECTIONS :

HEAT oven to 400°F.

MIX mayo, cheese and pepper until well blended; set aside.

PLACE fish in shallow foil-lined pan; drizzle with lemon juice. Top with mayo mixture; spread to evenly cover fish. Sprinkle with cracker crumbs.

BAKE 12 to 15 min. or until fish flakes easily with fork.

Trim 4 grams of fat per serving by preparing with KRAFT Light Mayo Reduced Fat Mayonnaise.
Special Extra
Add 1/4 tsp. dill weed to mayo mixture before spreading onto fish.
Serving Suggestion
Serve with a side green salad tossed with your favorite KRAFT Dressing.

Easy Baked Parmesan Meatballs

INGREDIENTS :

1 lb. ground beef
1/2 cup KRAFT Grated Parmesan Cheese
1/4 cup chopped fresh parsley
1 egg
1 clove garlic, minced

COOKING DIRECTIONS :

PREHEAT oven to 375°F. Mix meat, cheese, parsley, egg and garlic. Shape into 12 meatballs.

PLACE in foil-lined 15x10x1-inch baking pan.

BAKE 25 min. or until cooked through.

Serving Suggestion
Try serving with your favorite hot cooked pasta and sauce and a quick bagged salad tossed with your favorite KRAFT Dressing such as House Italian.

Substitute
Substitute 1 Tbsp. parsley flakes for the 1/4 cup chopped fresh parsley.

Parmesan Turkey Meatballs
Prepare as directed, substituting frozen LOUIS RICH Ground Turkey, thawed, for ground beef.

Chicken Parmesan Bundles

INGREDIENTS :

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated

COOKING DIRECTIONS :

HEAT oven to 375ºF. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken bundles in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

Save 40 calories and 4 g fat per serving by preparing with PHILADELPHIA 1/3 Less Fat Cream Cheese, KRAFT 2% Milk Shredded Mozzarella Cheese and RITZ Reduced Fat Crackers.

Make Ahead
Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, uncover and bake at 375ºF for 35 min. or until chicken is done.

Special Extra
Stir chopped fresh basil and/or sliced black olives into spaghetti sauce before heating.
